The traditional French recipe with some gourmet touches.
Ingredients: 4 to 5 persons
1.5 kg veal (shoulder or shank)
1 celery stick
1 leek
1 onion
5 garlic cloves
5 carrots
1 bunch of parsley
½ a bunch of thyme
4 bay leaves
½ a nutmeg
4 cloves
500 grams mushrooms
8 small shallots
(Or ½ a cup of pearl onions)
100 + 60 grams butter
100 grams wheat flour
3 egg yolks
200 grams crème fraiche
1 tbsp course sea salt
2 or 3 tbsp veal stock powder
(Or bones from your butcher)
1 lemon
½ or 1 glass white wine
1 tbsp black peppercorns
½ tsp nutmeg powder
1 tsp crushed black pepper
Salt and pepper eventually
Serve up with rice, potatoes or pasta.
