Chicken & Mushroom Omelette with corn relish.
Makes : 2 Omelettes
Total Time : 40 – 50 minutes
6 Eggs 1 Tablespoon cream
Salt and black pepper, to taste
1 Tablespoon olive oil
1/2 Red onion, chopped
1/2 Cup mushrooms, chopped
1 Teaspoon chicken spice
1/2 Cup cheddar cheese
4 Bacon strips, small diced
2 Garlic cloves, chopped/grated
1 Sweet Corn, boiled and removed off the Cob
Instructions :
1. In a small skillet on medium high heat, cook your onions and cook for a minute or two. Add your garlic and stir.
2. Add your chicken breast and cook till cooked all the way through. Season with chicken spice, salt and pepper. And side aside.
3. In a different skillet, add a teaspoon of olive oil, bacon and corn. And cook till bacon bits are crispy, season with salt, pepper and serve.
4. Beat eggs together with cream, salt, and pepper in a bowl.
6. Heat oil in a skillet over medium heat, pour in the beaten eggs. Cook and stir until the edges harden, 2 to 3 minutes. Flip and sprinkle cheddar cheese on top, add your toppings and add more cheddar cheese. Fold omelet in half and cook until egg is set and cheese is melted.
7. Serve your omelette honey mustard mayo, corn relish, fried breakfast potatoes and toasted bread.
8. Enjoy.
Easy Berry Compote
Total time : 15 minutes
Makes : 1 1/2 cups
Ingridients:
1/4 cup sugar3 tablespoons water2 cups fresh blueberries2 teaspoons fresh lemon juice
Instructions :
1. Combine 1 cup of the blueberries, water, sugar and lemon juice in a small saucepan. Cook over a medium heat for about 10 minutes.
2. Add the rest of the blueberries and cook for 8 minutes more, stirring frequently. Serve warm.
French Toast with Berry Compote
Total time : 20 minutes
Serves : 3
Ingridients :
6 large eggs1 1/2 cups heavy cream2 tablespoons vanilla extract1/2 teaspoon ground cinnamonPinch of ground nutmegPinch of salt6 slices of Ciabatta, 1 inch thick.4 tablespoons unsalted butter4 tablespoons vegetable oilPure maple syrup, to serve1/2 cup blueberry compote
Instructions :
1. Whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt in a medium bowl and set aside.
2. Soak the bread slices in the egg mixture, flipping them over after 2 minutes.
3. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side.
4. Transfer the cooked bread to a serving bowl and wipe skillet clean, and add the remaining butter, oil, and bread and cook the rest of the bread. Serve immediately.
5. Serve with maple syrup, mascarpone, berry compote and some lemon zest.
