Ingredients

2 to 3 large sweet onions, sliced thin
Fresh thyme and rosemary, chopped
Bottle (750 ml) of cheap wine (or expensive wine if flexing is desired)
16 oz Beef broth
2 sticks of butter
2 Tbsp of flour
Crusty bread sliced thick
Gruyère or Swiss or both cheese, grated
The hearts desire of salt, pepper, garlic powder, Worcester sauce, balsamic vinegar, and paprika

Directions

Melt butter until frothy and add onions, dash of salt and pepper. Cook on low and stir for what feels like an eternity (30-40 mins) until the onions are caramelized. Do not rush this step. Add in flour and stir until combined.

Pour in wine and beef broth, scraping up any bits of frond that is at the bottom of the pan, stir well, add fresh herbs and seasoning. Bring to a boil then back down to medium low heat for about 20-30 minutes.

TASTE AS YOU GO and add seasoning as desired.

Once soup is reduced, ladle into ramekins and fit bread to cover the surface of the bowl then top with a gracious amount of cheese.

Broil for 5-10 minutes until cheese is melted and bubbly.
