Chicken in Mustard Sauce
2 Tbsp Oil
4 Boneless Skinless Chicken Thighs
1 Onion Chopped
1 Tomato Chopped
2 Tsp Garlic
1 Tbsp Flour
2 Cups Chicken Stock
1/3 Cup Grainy Mustard
Salt and Pepper
In a dutch oven heat oil and brown chicken on both sides and season.
Remove chicken and set aside.
Add onion and tomato and saute.
Add flour and cook out the starch before adding the chicken stock.
Add mustard.
Return chicken to the pot and bring to a boil so flour thickens sauce.
Serve with a green salad and rice or potatoes or crusty french bread to sop up all the gravy.
A chilled bottle of dry white French wine would be perfect for this dinner.
