Ingredients:

1 cup cranberry, red grape or pomegranate juice (+1 tbsp white vinegar) or just 1 cup red wine

4 tbsp butter

3 large or 6 small onions, thinly sliced

3 cups chicken broth

2 cloves garlic, minced

1¼ cup heavy cream

400g pasta (any pasta of your choice)

1 cup mushrooms

2 tsp honey

1 tbsp soy sauce

½ tsp chilli pepper

½ tsp Black pepper

½ tsp Thyme

2 Bay leaves

Salt to taste

Benny powdered chicken stock

A handful of spinach, roughly chopped

Shredded cheese

1. In a large pot of medium-high heat, melt the butter and add the onions and honey together . Stir and leave the onions to soften for about 5 mins

2.Then add half of the red juice and reduce heat to low/medium-low heat. Cook for 8-15 minutes till onions are brown, wilted and caramelised

3. Add the garlic, mushrooms, thyme and peppers. Stir an cook for 3-4 mins. Then add the remainder juice, broth, soy sauce, bay leaves and pasta. Stir again and cook till pasta is almost cooked through, 8-10 minutes.

4. Add the shredded cheese and spinach and stir in. Serve hot and enjoy!
