Two Classic Bakery Recipes: French Butter Cookies (Sable Breton) & Coconut Macaroons (Rochers Coco) are much easier to prepare at home than you can believe! And they taste absolutely fantastic!
These cookies are very quick to make and they get wiped out fast! Below are the full written recipes.
French Butter Cookies (Sable Breton):
2 sticks (1 cup) room temperature salted butter
1/2 cup granulated sugar
3 egg yolks (2 egg yolks for the dough, 1 for brushing on top)
1 tsp vanilla extract
2 & 1/4 cup plain flour, plus some extra for rolling/kneading
Preheat oven to 375 degrees Fahrenheit.
Whisk butter and sugar for 2 minutes on high speed, until fluffy. Add 2 egg yolks, and 1 tsp vanilla extract. Whisk for 2 more minutes. Add flour, and mix for another 2 minutes. In between, scrape down the dough back to the center, to ensure it is fully incorporated.
Once dough is mixed well, sprinkle 2-3 tablespoons on a clean kitchen counter or surface. Knead your dough on this for 1 minute. The dough is soft and sticky, if you find it too soft to handle, wrap it up in plastic wrap and refrigerate for 20-30 minutes.
Generously dust your rolling pin with plain flour, and roll the dough out to about 1/4th of an inch thickness. Using a circle cookie cutter, cut cookies out. Place them on a parchment lined baking sheet. Whisk the third egg yolk, and brush on each cookie.
Bake at 375 degrees Fahrenheit for 12 minutes, or until golden brown and crisp. Wait 5 minutes before removing from baking sheet and placing on cooling rack. Enjoy with tea or coffee! The combination of sweet and salty is phenomenal, and the buttery crumb is perfect!
Coconut Macaroons (Rochers Coco)
14 oz sweetened coconut flakes
1 tsp vanilla extract
1 tbsp of plain flour
1/3 cup of sugar
1/2 a tsp of salt
3 egg whites
1 cup dark chocolate chips
1 tbsp butter
Preheat oven to 375 degrees Fahrenheit.
In a big bowl, combine the coconut flakes, vanilla, flour, sugar and salt. Mix well and set aside. Whisk egg whites till soft, fluffy peaks form. Gently fold the egg whites into the coconut mixture until fully combined. Line a baking sheet with parchment paper. Lightly wet hands. Take golf ball size portions of the cookie dough, and place on the baking sheet. Gently press down. Bake cookies at 375 degrees for 8 to 10 minutes or until they are lightly golden and cooked through.
While the cookies are baking, place chocolate chips and butter in a microwave safe bowl. Microwave for 1.5 minutes, mixing at 30 second intervals.
Once cookies are baked to perfection, wait 5 minutes before placing them on a cooling rack. Drizzle or dollop the melted chocolate on each cookie. Serve with tea or coffee. The sweet, soft, chewy inside and the lightly crisp exterior is perfectly paired with the dark chocolate!
