Traditional French onion soup is made with wine, cognac, garlic, and beef broth and is therefore not a vegan or vegetarian recipe. However, vegans and vegetarians can substitute beef broth with dark miso, mushroom, or veggie broth. Just one or two tablespoons of these flavorful ingredients gives vegan French onion soup a strong broth and eliminates the need for additional salting.
Although I did not use thyme in this particular recipe, thyme is the quintessential flavor of traditional French onion soup. So too is garlic. A ¼ tsp of ground thyme or a sprig of fresh thyme and 1-2 minced garlic cloves is all you need.
Traditional French onion soup requires carmelizing onions while this particular recipe uses fermented onions instead. Fermented onions are lower in carbs and sugars making them ideal for low-carb, ketogenic or diabetic diets.
To ferment onions, slice 4 medium red or white onions into thin strips, add 1 tsp each salt & black pepper, minced garlic cloves,(optional), pinch of thyme (optional), and transfer to pint jar. Using a kraut pounder, push onions down firmly and fill jar with water. Cover and let sit at room temperature for 3-10 days.
To make fermented French onion soup, transfer onions to a pot, add broth of your choosing, and heat to slightly warmer than room temperature, approximately 74 degrees Fahrenheit.
Transfer soup to an individual soup crock, add a thin slice of fresh sourdough bread, top with grated cheese, and broil until cheese is golden brown. Add a dollop of fresh soured cream (optional) and serve immediately.
To make a heartier meal, add some ground, chopped, or pulled/shredded meat and parmesan cheese. Vegans can add chopped celery, garlic, diced carrots and tofu chunks.
