SAMBAR CURRY RECIPE:
INGREDIENTS:
1 cup/ 150 grams Tuar Dal,
2 cups of Water,
2 tbsp Oil,
1 tbsp.Mustard Seeds,
1/4 tbsp. Fenugreek Seeds/ Methi Seeds,
3 Dry Red Kashmiri Red Chillies,
1 Green Chilly,
10-12 Curry Leaves,
1/2 tbsp. Asafoetida / Hing,
1 medium Sliced Onion,
1 medium Chopped Tomato,
1 cup of Carrot, Cauliflower , and French Beans. (You can add any vegetables here as per choice)
1 small Boiled Potato,
1 small onion (cut it into big cubes),
12 to 15 Drumsticks,(Half cooked.),
1/2 tbsp. Turmeric Powder,
1/2 tbsp. Red Chilly Powder,
2 tbsp. Sambhar Masala Powder,
2 tbsp. Tamarind Pulp/ Juice,
Salt,
1 tbsp. Jaggery,
Warm Water to adjust consistency,
Chopped coriander
1 tbsp. Pure Ghee.
RECIPE:
Take 1 cup of tuar/ toor dal and wash it and soak in water for 30 minutes. Then pressure cook dal with 2 cups of water till 3 whistles.
Heat a pan. Add 2 tbsp. Of oil. Then add Mustard seeds, Fenugreek Seeds. Let them crackle.
Then add Red chillies, curry leaves, green chilly, and sliced onions. Saute till golden brown.
Add chopped tomatoes, let tomatoes cook for 2 minutes on low flame.Add vegetables here as per choice ( carrots, French beans, cauliflower, brinjal, radish, green peas). Stir fry veggies.
Now add cubes of boiled potato, boiled drumsticks and onion pieces cut it into big cubes. Stir fry them and cook it for 2 minutes.
Add asafoetida, turmeric powder, red chilly powder, and sambar masala. Stir nicely that masala should get spread with all veggies. Cook for 2 minutes on low flame. Add salt here.
Add tamarind pulp. Saute for 2 minutes.let the pulp gets dry.
Add cooked tuar dal here. Adjust consistency here by adding some warm water. ( as per choice).
Now add jaggery. Let the sambar curry boil for 5 minutes with covered lid.
Add Pure ghee here. (perfect color, aroma and consistency).
For garnishing add freshly chopped coriander.
Ready to serve.
Serve sambar curry piping hot with steamed idli, dosa, plain rice or uttapam.
