This Coq Au Vin recipe is a simplified version of the classic French dish of chicken braised in wine, mushrooms, lardon, mushroom and other vegetables. I found this dish extremely succulent, rich and flavourful. Once you cook off the wine and braise the chicken in a bed of chicken stock and vegetable medley, it becomes truly YUMMY!
I grew up watching Ina Garten (barefoot contessa) on the Food Network; when I saw her make this classic french dish, I HAD to try it out myself!
Eat it as is, or serve it with some rice.. you will definitely want to try this one out!
Recipe:
– 2 tbsp cooking oil
– 6-8 chicken thighs
– 1/4 pack bacon
– 1/2 tsp salt
– 1/2 tsp pepper
– 1 1/2 cup red wine
– 1 1/2 cup chicken stock
– 1 1/2 tbsp tomato paste
– 4 chopped garlic
– 1 small bunch of thyme
– 2 tbsp flour
– 1 large onion
– 2-3 carrots
– 1 small bunch mushroom
