Pork Jus Recipe:
In a large pot drizzle 2-4 pounds of pork bones with olive oil, then roast in a 475ºF oven for 30-40 minutes.
After roasting bones, pour in enough cold water to completely cover bones. Add 1 teaspoon apple cider vinegar and, bring up to a boil, reduce heat and simmer for one hour.
After one hour add two chopped carrots, two stalks of celery chopped, a handful of fresh parsley, one half bulb of garlic, one half onion, a sprig of rosemary, sage and thyme. Add a little salt and black pepper, cover and simmer for 12-14 hours.
After simmering, remove bones, veggies and herbs. If needed add more salt to taste.
