Happy New Year! For my first recipe in Paris, France; I made Vegan, Gluten-free French Onion Soup. Part of the challenge for this creation, besides making it Vegan, and Gluten-free was that my temporary kitchen in Paris doesn’t have an oven! I hope you enjoy my version of this iconic French soup, and remember, just because you don’t have all the tools, or prefer Vegan, Gluten-free eating doesn’t mean you can’t enjoy the flavors your craving!

Recipe:
– 5 Yellow Onions (Or, White)
– 1/4 Cabernet Sauvignon Wine (Or, you can use cooking Sherry, Dry White Wine, Or, if you prefer no Alcohol use Apple Cider Vinegar)
– 2 Tbsp. Coconut Oil
– 1 Thyme, Bay leaf bundle
– Vegan, Gluten-free baguette
– Vegan Mozzarella
– Salt & Pepper
– 1 Vegetable Bouillon Cubes + Water
