This chicken fricassee recipe is a delight. Generally accepted as French, you can actually find fricassee dishes in many different countries around the world. I this case it’s a classic mix of stock, white wine, cream and mushrooms. The chicken can be replaced with rabbit, veal or pork etc. It’s not only simple to make but quick too. Ingredients
5 or 6 chicken thighs
1 tbsp vegetable oil
1 large knob of butter
200g sliced mushrooms
1 large onion chopped
2 cloves garlic chopped
Cornstarch slurry (2 heaped teaspoons)
2 sprigs of thyme
1 bay leaf
150ml dry white wine
150ml double (heavy) cream
750ml chicken stock
A handful of chopped fresh parsley
Salt and pepper to taste
