3 grated shallots
1 grated apple
1 grated pears
2 Tbsp oil
1 Tbsp five spice powder
2 bay leaves
1 large jar red cabbage, ~650g
salt, pepper, sugar to taste

✏️ Recipe: Potato dumplings (makes 4)
2 large potatoes, slightly overcooked (~350g)
70g potato starch
4g salt
small bunch of fresh dill, chopped
pinch of nutmeg
orange zest powder (optional)
15g olive oil or any aroma oil

✏️ Recipe: Fried Duck Breast
Duck breast, no skin, pounded

50g flour
25g potato starch
1t gingerbread spices
1t white pepper
1/2t salt

25g chickpea flour
75g water
1/2t salt

250g panko
125g gingerbread cookies, crushed

✏️ Recipe: Hoisin Gravy (approximation)
Browned roux
Vegetable + Mushroom Stock Paste
Hoisin Sauce
Water
Salt, pepper, MSG, maggi to taste
Starch slurry to thicken
Mixed Herbs (Rosemary, Sage)
Garlic, crushed
