Hello Foodies! This French Onion Soup recipe is so easy you will be making it all the time. Many people wonder, ‘how do you make French Onion Soup?’ The answer is easier than you think! To make this soup even easier and to take it to the next level we started this soup a few day ahead by making a few pot roasts in a dutch oven. All of those amazing juices were saved to make this delicous soup.
This French Onion Soup recipe starts with 6lbs. of yellow onions. Peel them and cut them in half. To make perfect half moons, put them in the food processor with the half moon layers showing. Once all onions are cut, melt one stick of butter in an extra large dutch oven. Add the onions and a few teaspoons fo kosher salt. Cover the dutch oven and allow the onions to cook on medium heat for at least 10min. They will get nice and sweaty! Remove the lid and lower the heat to low and allow the onion to carmelize. Keep stirring them often tho! After one hour add 2T. of sherry wine or sherry vinegar and 2T. of flour. IF you have frech thyme add a few sprigs or use a 1/2t. of dry. Continue to stir. Add in all of the leftover broth from the pot roast, or make some beef broth using Better Than Bullion and hot water (read panel for ratio). Bring to a boil. The soup should be fully cooked, but needs to be seasoned. Taste it for salt, pepper, acid (use more sherry vinegar or use white wine vinegar), if it is lacking umami, add a few teaspoons of Worchestershire. Continue tasting and adding flavors to meet your needs.
Once the soup is ready, pour into an oven proof bowl. Toast some fresh sourdough and cut into large cubes-place on top of the soup. Grate some swiss cheese or any other favorite cheese and sprinkle over the toasted cubes. Place in the broiler or toaster oven on toast until golden brown on top.
