I was really encouraged after last week’s egg tart attempt so I decided to make even more dessert this week. Madeleines are super easy to whip up, and most of us have all the ingredients at home already anyway. In my humble opinion, the magic lays in the mould. This little French butter cake is a must try! Sure you could just go and buy them from a fancy bakery, but nothing beats freshly baked goodies at home.

Ingredients:
Butter – 1/2 cup
Eggs – 2
Sugar – 1/2 cup
Flour – 1 cup
Lemon zest – 1/2 lemon
Salt – dash
Vanilla extract – 1 tsp

Preheat oven to 375F. Melt butter in microwave on medium heat. Beat eggs and sugar until white and ribbony. Fold in the flour, lemon zest, and vanilla extract. Once well combined, pour in the melted butter and fold until everything is mixed well. Spoon batter into the madeleine tray and bake for 9 minutes.
