French Onion Soup
Ingredients:
6 Yellow Onions
3 Cups Chicken Stock
3 Cups Beef Stock
1 Cup Chardonnay Wine
2 Tbsp Garlic (minced)
4 Tbsp Butter
2 Bay Leaves
2 Sprigs Thyme
1 French Baguette
Swiss or Gruyère Cheese
Chives
Corn Starch
Olive Oil
Salt and Pepper
Instructions:
*Peel and slice onions in half. Cut onion haves into thirds across the grain. Slice onions thinly with the grain into pieces that will fit on a spoon. Place in a large bowl and set aside.
*In a large pot on medium heat, add 4-5 Tbsp of olive oil. Add sliced onions, salt, and pepper. Caramelize the onions making sure to stir every few minutes so they do not burn. (This should take about 20 minutes or so).
*Next add garlic to the pot and sauté for 1 minute until fragrant then deglaze with white wine. Let the wine reduce for about 3 minutes.
*Add butter and gently melt into the onions then add bay leaves, and fresh thyme. Cover the onions with chicken and beef stock. Season with more salt and pepper to taste.
*Reduce the heat and let the soup simmer for at least 30 minutes. After the soup has cooked and onions are soft but still have a little bit of texture, combine 2 Tbsp of corn starch with 4 Tbsp of cold water creating a slurry. Add the slurry a little at a time to the simmering soup, make sure to immediately stir and incorporate. You want the soup to be slightly thickened so it has a nice texture.
(NOTE: You might not need all the corn starch slurry, remember we want a slightly thickened soup NOT gravy thick. You can also thicken the soup with a roux at the beginning of the process if you prefer).
*Slice the baguette diagonally into 1/2 inch slices. Toast baguette slices in a pan with a little butter until gold and brown. Place on a baking sheet lined with parchment paper. Cover each slice with cheese and bake in the oven set to 350 degrees Fahrenheit or under the broiler for about 5 minutes until the cheese is melted.
*Serve the soup in a shallow bowl with a cheesy baguette crouton on top and garnish with fresh chopped chives.
