Ingredients:
• 3 Sweet Yellow Onions, French cut
• 3 Red Onions, French cut
• 4 slices of bacon, cut into lardons (thin strips)
• 2 sticks salted butter
• 1 T Thyme
• 1 T basil
• 2 bay leaves
• 1 T black pepper
• 3 garlic cloves, minced
• 1 ½ C dry white wine (I used sauvignon blanc)
• 4 C chicken stock (I used homemade)
• 1 T beef bouillon
• 4-5 C water
• 1/3 C All-purpose flour
• Baguettes, sliced
• Mozzarella

Directions:
1. Using a dutch oven or stew pot, cook your bacon until crispy & set bacon aside
2. Med heat, add butter and onions
3. Stirring occasionally, render onions until caramelized (dark brown)
4. Add garlic, beef bouillon, thyme, basil, bay leaves, pepper
5. Deglaze with wine
6. Remove bay leaves
7. Add flour, stir and cook for 5 minutes
8. Add chicken broth and water
9. Simmer for 25-30 min
10. Pour into serving size oven safe bowls, on baking dish
11. Top with toasted baguettes and sliced mozzarella
12. Broil on high until cheese is bubbly
13. Top with bacon & serve
