Rack of Lamb

Season Rack with seasoning of choice generously front and back. In this video I used the Black and Tan Seasoning By Fire & Smoke Society. This seasoning gave it the perfect flavor combination.

Set smoker to 300 degrees and smoke for 45mins to an hour or a desired internal temp of 135 degrees.

Red Wine Vinaigrette

1/2 cup Extra Virgin Olive Oil
1/2 Red Wine Vinegar
2 Tsp of Spicy Brown Mustard
3-4 TSBP Sugar
Tsp Italian Seasonings
2 Cloves of Garlic Pressed
Salt and Pepper to Taste
Mix ingredients together. Place in sealable squeeze bottle and refrigerate.

Salad Mix
1 Head of Red Leaf Lettuce
1-2 Apples I used Fugi Apples
1/2 Red Onion Sliced
Add Feta Cheese to preference

Candied Walnuts
1 1/2 Cup Diced
2 TBSP Butter
1/3 Sugar
Cook and stir mixture until caramelized then remove from heat
