Bonjour. Welcome to Le Petit Château! Thank you for joining us in the kitchen today where we are making some gorgeous little French classic financiers! We will decorate ours with a garnish of choice, and you can choose how you would like to make yours too.
Financiers are characterised by ‘beurre noisette’ which is the flavour base from the butter turning to a hazelnut colour. Typically the financier would normally be seen as a small rectangular mould. However, they can be made in a regular muffin tray too.
We discuss some of the history behind these beautiful comfort treats as we wait for our batter to rest in the refrigerator.
I love these gorgeous delights, the eggshell like exterior and the beautiful textured buttery almond interior with a little surprise garnish really make these special. A simple recipe and beautiful treat that is not overly complex, but is absolutely sure to please!

For this recipe you will need:
50g plain flour
60g almond meal
150g icing sugar
3 egg whites
150g plain butter (unsalted)
Toppings of choice, Berry, flaked almonds etc
Batter to rest in fridge for 1 hour ( ensure covered with seal touching the surface of the batter to avoid drying out.
Grease moulds ( can use a muffin tray/friand tray with 12 moulds)
Bake in preheated oven 200 deg for 5 min then reduce to 180deg for 10mins
