24 Extra Large Escargots
2 Sticks Butter at Room Temperature
1 TBS Dry White Wine
12 Garlic Cloves Finely Chopped
1 Large Shallot, Finely Chopped
3/4 Cup Fresh Parsley, Chopped
1 French Baguette
Preheat oven to 450 degrees.
Mix butter with electric mixer. With motor off, add wine. Then with motor on, add
garlic, shallot and parsley.
Place escargots in ramekins. Dot with butter. Bake 10-15 minutes. Serve with slices
of French Baguette.
Bone Marrow
4 Beef Bones with Marrow
1 French Baguette
Preheat oven to 450 degrees.
Put bones in baking pan. Bake 10-15 minutes until marrow is soft and has begun to
separate from the bone. Remove from oven before marrow begins to drizzle out.
Scoop marrow out onto slices of French Baguette.
French Onion Soup
4 TBS Butter
3 Large Onions, Sliced, Divided
1 1/2 tsp Brown Sugar, Divided
6 Cups Beef Broth
3 Sprigs of Fresh Thyme
5 oz. Gruyere Cheese
1 Cup Red Wine
1 French Baguette
Preheat oven to 450 degrees.
Melt butter skillet. Add onions and brown sugar and cook 10 minutes. When onions
are cooked, add wine.
Add beef broth to pot. Bring to a boil and simmer.
Slice two slices of Baguette. Place in oven and toast. Flip toast and cover with
cheese. Broil until browned.
Add onions and wine to broth. Ladle into bowls. Top with cheese toast.
Bouillabaisse
1 Cup Olive Oil
2 Medium Tomatoes, Chopped
1 Onion, Thinly Sliced
1 Carrot, Peeled and Thinly Sliced
2 Pinches Saffron
1 Bay Leaf
4 Sprigs of Fresh Parsley
2 Garlic Cloves, Chopped
Juice from 1 Lemon
1 Cup Fish Broth
1/2 Cup White Wine
1 Lb. Shrimp, Shelled and Deveined
1 Lb. Scallops
1 Lb. Cod
1 French Baguette
In a large saucepan, heat oil over medium heat. Add tomatoes, onion, carrots, saffron,
bay leaf and parsley. Add garlic. Add fish and lemon juice. Boil for 10 minutes. Add
fish broth and wine.
Serve with French Baguette.
Champagne Poached Pears
1 Bottle Pink Champagne
1 Cup Sugar
1 lb. Whole Strawberries
Zest from 1 Lemon
1/2 Vanilla Bean, Split
2 Large Bosc Pears, Peeled, Under Ripe
Combine all ingredients except pears in a bot and bring to a simmer. Carefully lower
pears into pan.
Simmer 15-17 minutes for small pears, 30 for large pears.
Cool before serving. Place pears on serving plate and surround with strawberries.
