Ron Pickarski is founder, President and Executive Chef/Culinologist for Eco-Cuisine, Inc. in 1992 which is the first plant-based foodservice company in the US. Chef Pickarski is the first plant-based vegetarian chef to be certified as an Executive Chef by the American Culinary Federation. He has 57 years (42 as a plant-based chef) experience in professional kitchens ranging from fine dining to QSR. His work in plant-based Culinology began in 1982 and his specialty, under the Eco-Cuisine brand is research and development speed scratch plant-based vegetarian proteins and pastry products for food service operations. He was chosen by the UN as the 2016 International Year of the Pulse chef for North American for his work in taking beans to entrée status. Ron is also the Founder/Director of the American Natural Foods, Inc. a 501c3 Non-Profit. Under the ANF Chef Pickarski created the American Natural Foods Team which competed at the International Culinary Olympics in Germany where he won seven medals (gold, silver, and bronze) with plant-based vegetarian cuisine over 20 years of competition. He is the author and self-published “The Classical Vegetarian Cookbook for Professional Chefs and Inspired Cooks” which is used in culinary schools and by chefs to teach plant-based cuisine.
