INSTANT POT BEEF STEW EASY! WITH RED WINE!
INGREDIENT LIST:

-2 lbs boneless beef (marbled is better), cut into 1-inch cubed (I used Crowd Cow Sirloin Steak)
-1 tsp freshly cracked pepper
-2 tbsp olive oil
-1 medium yellow onions, cut into 1/2-inch chunks
-7 cloves garlic, smashed & chopped
-2 tbsp balsamic vinegar
-1 tbsp tomato paste
-1/4 cups dry red wine
-2 cups beef bone broth
-2 cups water
-2 medium bay leaf
-1/4 tsp dried thyme
-1/4 tsp dried parsley
-1 tsp sugar
-2 medium russet potatoes, cubed & par-boiled (half cooked)
-2 cups baby carrots, par-boiled (half cooked)
-1 cup sweet peas
-Salt as needed to adjust the taste
-Onion powder as needed to adjust the taste

I do not thicken my stew, but if you like thick beef stew, I included the recipe below:

To thicken (optional):
-3 tbsp water
-3 tbsp cornstarch

How to thicken the broth:
-Mix thickening ingredients together in a bowl.
-After the beef and vegetables finished cooking, add the mixture and stir.
-Let it boil for a minute and you will see the sauce will gradually thicken.
