Ingredients –
Chicken – 3 breast ( Butterfly cut)
Eggs – 2 no
Olive Oil – 2 Tablespoon
Butter – 60gm
Cheese – 25gm
Flour – 4 to 6 tablespoon
Grape Juice / White wine – 150ml
Chicken stock cube -1 No
Garlic – 5 to 6 cloves minced
Fresh Parsley – 1 handful Chopped
Chilli Flakes – 1 tea spoon
Lemmon juice – ½ lemon
Crushed Black pepper – 1 Tablespoon
Salt to taste

Method-

• Cut Chicken in Butterfly cut and pound under parchment pepper to make even sooth escallop/ Cutlet
• Make seasoned flour and keep in plate
• Mix 2 eggs, cheese, Chopped parsley salt and pepper Chilli Flakes to make even mixture
• Dredge chicken breast in seasoned flour and them dab in egg mixture
• Heat a heavy bottom Pan / Skillet and little olive oil and butter
• Fry chicken till light golden brown on both sides, remove from pan
• Add butter and chopped garlic sauté, deglaze with grape juice and stock cube water mixture.
• Add juice of half lime and chopped parsley mix well and reduce. Add chicken back to pan and cook for 7 to 8 min on low heat.
• Check seasoning and serve hot with garnish of sliced lemon and parsley.
