▶ List of ingredients for 4 persons :

– 800g of beef (Feather or Shank pieces)
– 300g of mushroom
– 150g of smoked bacon
– 40g of roast wheat flour
– 3 carrots (1 for marinade)
– 2 onion (1 for marinade)
– 1 bottle of red wine (half bottle for marinade)
– 50cl of homemade beef stock, link here :
– Thym
– Laurel

▶ Tips :

The wine :

Historically we use a wine from the Bourgogne region but personally I prefer tannic wines from the south of France.
I recommand to select a wine from this region list :

– Bordeaux
– Cote du Rhône
– Languedoc
– Haut médoc

If you can’t found French red wine from this region, select wine from other country with “Malbec” or “Cabernet sauvignon” grape variety.

The wheat flour :

If we roast the flour it is to give it more flavor and to keep the sauce dark
But be careful, it must remain golden, if it becomes too brown it must be taken out of the oven.

▶ History :

In the middle Ages it was a dish that the peasants consumed during the celebration days.
Because Bourgnogne is renowned for the quality of its wines and cows, the recipe quickly became popular around the world.
