Ingredients :
– 2 duck breasts (the skin is very important), 1 breast for 2 persons
– 3 oranges (2 for the juice, and 1 for the dressing of the plates)
– 1 lemon
– 3 tablespoons of granulated sugar
– 1 big teaspoon of cornstarch
– Cointreau
– Salt and Pepper

Recipe :
Make a few incisions in the skin of the duck breast.
Squeeze the juice of 2 oranges and a lemon.
Pre-heat the oven at 200 °C (400 ° F) and while the oven is heating up, make a caramel. It’s very easy to make a caramel, you just need to put the sugar in the pan on medium heat and wait! The secret to getting your caramel right is to do nothing! You can move the pan around using the handle but you must not try to mix it with a spoon.
When the caramel is blond color (dark but not burnt), you can add the juice… (Be careful, it will splash because of the big difference in temperature!), add 3cl of cointreau (optional) and re-heat the whole thing.
Dilute the cornstarch with a little sauce.
When the caramel is completely mixed with the juice, add the diluted cornstarch gradually and mix with a wooden spoon until the sauce thickens. It must look like a syrup.
Now take care of the duck breasts: On a very hot pan place the breasts skin side for 3 minutes, then turn off the heat and flip them flesh side for 1 minute.
Then put the breasts in this dish that goes is oven-proof, skin on top. Salt, pepper. And now put in the hot oven for about 12 minutes. That’s the part you can do at the last minute when you have guests!
And do not forget to warm up the sauce!!
