{the best} French onion soup🧅
this recipe takes SO many onions and chopping them definitely made me tear up a little😅 but on a cold day, you can’t beat this cheesey, warm soup!
For this recipe, I used:
• 4 large onions
• 1 stick of butter
• 4-5 cloves minced garlic
• salt and pepper
• lots of fresh thyme and bay leaves
• 1 cup of red wine
• 1/4 cup flour
• 32oz beef broth
• topped with a few baguette slices
• lots of parm and gruyere cheese
To start, I chopped the onions then began to cook them down in a large pot with one stick of butter. It looks like a lot, but the more onions the better since they cook down A LOT. Then, I added the salt and pepper, garlic, and fresh herbs. I let the onions caramelize for about 45 min to an hour. This process is so important for super flavorful soup! Don’t rush the process🧘♀️
After the onions cooked down, I added one cup of red wine and let this simmer until the wine basically evaporated. Then, I added the flour and stirred it all together, letting it sit for about 5 min. Finally, I added the beef broth and let that simmer for another 10-15 min.
I placed one- two slices of a baguette at the bottom of my bowl and then ladled the broth and onion soup mixture on top. I topped with lots of shredded parm and gruyere cheese! 🧀
Place your soup bowl on a cooking sheet covered in aluminum foil just in case it bubbles out and broil on high for a few minutes until cheese is bubbly and golden on top! Before digging in, make sure to let it cool cause this soup is HOT! Top with chives or parsley and enjoy!
