A simple, elegant, DELICIOUS, TASTY and really, really GOOD classic soup. A true comfort dish is a dish that one should never mess around with. Caramelised onions, rich homemade beef stock and an eye-watering helping of cheese, this is a meal fit for royalty.

French onion soup is very easy to prepare. Ok, maybe a little time-consuming but without a doubt worth every pain-staking minute.

The secret is all in the slow constant cooking of the onions, to release all that flavour it takes time but well worth it. Cooking the onions to just the right point is what gives this dish its sweetness, colour and morish flavour, adding the bread to thicken the soup to absolute perfection.

Onions are one of those vegetables that don’t get a lot of love. But they’re actually packed with disease-fighting antioxidants and are a fantastic source of vitamin C and B6, iron, folate and potassium. Not bad for a humble onion!

French Onion Soup
Serves 2

For this recipe you will need:
• 600g onions
• 500ml beef stock
• 20ml brandy
• 30g butter
• 60g rump steak
• 20g gruyere cheese
• 10g salt
• 1 bouquet garni (parsley stalks, bay leaf, thyme, rosemary)
• 1 baguette cut into 1 inch slices

French Onion Soup, yummy, you can’t go more French than with this comfort food.

With soups it’s always tricky to pair wine, one of the most difficult recipes to pair wines with but with the amazing variety of wines available there always will be wines to pair.

With French Onion Soup look for white wines with low alcohol, medium acidity, medium to full aromas and medium dry.

My recommendations are:
White wines

• Riesling Kabinett from Germany
• Gruner Veltliner from Austria
• Gewurtztraminer from Alsace in France
• Bacchus from England
Look out as well for Natural white wines which are low in alcohol (10/11% ABV).
