In this tasting we’re looking at a couple of things the winemaker can do in the vineyard to change the wine’s flavour. One of the wines is picked early, like the first tasting of this series; the other is left on the vine to rot – but a very special type of rot!

– Botrytis Semillon (look out for wines from New South Wales in Australia or Sauternes in France)
