I am so excited to share with you my husband’s recipe for French crepes. I have eaten many crepes in my life, and I can quite honestly say his recipe is the best!
These crepes are lacy and tender, with just the right amount of sweetness. Perfect topped with sugar and lemon, Nutella, or salted caramel. I’ve also eaten them just on their own, and they’re incredible!

INGREDIENTS
3 large eggs
6 tbsp, granulated sugar
3 tbsp, vegetable oil
3.5 tbsp, unsalted butter (melted)
2 ¾ cups, whole milk
3 tbsp, rum
1 ¾ cup and 2 tbsp, all purpose flour
METHOD
In a bowl add eggs, sugar, oil, butter, milk, and rum. Whisk until smooth.
Add in flour, and whisk together until smooth and no lumps can be seen. Allow to rest for 30 minutes to an hour in the fridge.
*You can also put all the ingredients in a blender, and blend until smooth.
Heat a medium non-stick frying pan on medium, and grease lightly with melted butter.
Pour in 1/4 cup of batter into the centre of the pan, and swirl quickly to create a round crepe.
Cook for 45 seconds on the first side until golden brown, then use a spatula to flip cooking the other side for another 30-45 seconds.
Place on a platter and sprinkle with granulated sugar. Enjoy! 🙂
