The original French recipe of Ratatouille, it consists of two main parts, the sauce that is full of flavor, and the top layer of vegetables.
You can use other vegetables than what I used in the video, like squash, potatoes, or onions. I do prefer it this way though.
Please take in account that is is not a fast recipe, it needs several steps and each takes some time, so be prepared but you will be rewarded with the tasty dish!
Ingredients:
– For the sauce:
1 Small onion
1 Garlic clove
1 Carrot
1 Chili pepper
2 Bell peppers
3 Tomatoes
1/2 TSP Thyme
1/2 TSP Basil
1 TSP Herbs de Provence
1 TSP Salt
1 TSP Sugar
1 TBSP Butter
4 TBSP Olive oil
– For the top layer:
1 Zucchini
1 Eggplant
2 Tomato
1 Bell Pepper
4 TBSP Olive oil
1 TSP Salt
1/2 TSP Thyme
– Optional garnish: Parmesan cheese & parsley
Please don’t skip Herbs de Province because its flavor is strong and necessary for this recipe, it consists of: thyme, marjoram, wild thyme, sage, savory, oregano, tarragon, rosemary, chervil, basil, sage, bay leaf and fennel.
