Ingredients:
1. Water – 3/4 cup
2. Nido milk powder – 5 tbsp
3. Sugar – 2 tbsp
4. Salt – a pinch
5. Room temperature butter – 2 tbsp (28 gms)
6. Room temperature eggs – 2 pieces
7. All purpose flour – 4 tbsp full
8. Vanilla essence – 1/2 tsp or as per taste
Method:
Milk Mixture:
a) After mixing 3/4 cup of water with 5 tbsp of nido milk powder, let the mixture boil.
b) Add 2 tbsp of sugar, a pinch of salt, 2 tbsp (or 28 grams) of room temperature butter to
the heated mixture.
c) Cook the mixture until the sugar dissolves and the butter melts.
d) Turn off the flame and let the mixture cool completely.
Egg Mixture:
e) In a separate bowl, add 2 pieces of room temperature eggs, 4 tbsp full (heaped) all purpose flour, 1/2 tsp of vanilla essence (or as per taste).
f) Mix the contents until it turns into a smooth paste.
g) Mix in the milk mixture (created through steps a to d) into this mixture.
h) Mix well into a thin batter, then cover and leave outside for 20 minutes.
Crepe Cooking:
i) Apply a quick dab of non-stick spray to your frying plan and brush evenly across the pan surface.
j) Turn on the heat to a low-medium flame and heat up the pan.
k) Pour 1/4 cup of the batter you’ve created to the pan. Rotate the batter in the pan evenly, in
multiple layers to achieve a little thickness.
l) Wait until the edges turn golden brown, then flip the crepe onto the other side.
m) Now wait for another 20 seconds before scooping up the crepe into your plate.
Crepe Decoration:
n) Spread nutella across the crepe in the quantity required.
o) Add banana slices as required.
p) Fold and decorate as seen in the video. We’ve used raspberries but you can use
whatever fruits you wish.
q) Add a scoop of vanilla ice-cream.
r) Using a piping bag, pour over some nutella.
s) Add some icing sugar (optional) and some pistacho powder, as required.
As an alternative style, especially for kids, you can create a version with just the nutella filling and no bananas. This can be rolled so it’s easy to carry and eat. You can decorate it with nutella, strawberries and icing sugar as required.
