Hello friends!Here are some meals I made for my family this past week that we all really enjoyed. I hope this gives you some inspiration for meal planning, and also helps a bit on how these meals are prepared. A lot of food blogs are now including videos, but sometimes it’s much more helpful to see how everyday people are cooking up these meals. Please let me know if you enjoy these types of videos, so that I can make more of these in the future. Enjoy!

Baked Buffalo Chicken Egg Rolls-

One Skillet French Onion Tater Tot Casserole-

***Used 1.5lbs of fresh Halibut from Costco
Flour dredge: 3/4 cup of flour
Salt and Pepper and Cayenne
Batter: 1 cup of flour
1 tsp Baking powder
½ tsp salt
3 tablespoons cornstarch
1 can/bottle of beer (or less, just use till batter is thin like pancake mix)

Salt the fish, let it sit for 5 minutes. Blot fish with paper towel to absorb moisture, then dredge fish in flour mixture on all sides. Place into batter and shake off excess

Heat vegetable oil to 375 and preheat oven to 215F
Fry fish on one side for 2 mins, flip and fry for another 2 mins
Transfer to cooling rack that is placed on cookie sheet and place in oven to fry the rest
