Ingredients:
▢1 1/2 pounds onions, peeled and sliced paper thin
▢2 cups buttermilk
▢2 cups flour, all-purpose
▢3 tablespoons Tony Chachere’s seasoning, or your favorite seasoning
▢Peanut oil for frying, (I like this best, if there is an allergy any other oil with a high smoke point can be used.)
Instructions:
Add oil to the deep fryer and heat to 375F. You can also pan fry in about 3 inches of oil.
Blend the flour and the seasoning. If you can’t find Tony Chachere’s then use a teaspoon of salt, a teaspoon of garlic powder, a 1/2 teaspoon of paprikaand 1/2 teaspoon cayenne.
Set aside
Cover the onions with the buttermilk.
Let stand 10 minutes.
Drain onions, pat dry, and then dredge in the flour.
Fry, a few at a time, until golden brown and crisp.
Drain on paper towels.
Store in an airtight container at room temperature for a couple of days.
You can crisp them back up if necessary in a 375F oven for 5 minutes or so.
