French Toast:
Per portion / person
Ingredients:
1 egg
1 piece of bread
Splash of milk
Pinch of salt
Pinch of cinnamon/nutmeg
1 tsp sugar
Drizzle of oil
1 tsp butter
To serve:
Dusting of icing sugar
Maple syrup (as desired)
Method:
1. Break the egg into a bowl and add the milk – whisk
2. Add the salt, sugar and cinnamon/nutmeg – whisk
3. Add the bread to the mixture, turning a couple of times, until you see the bread has soaked much of the mixture
4. In a frying pan add the oil and butter on a medium heat until the butter begins to sizzle.
5. Slide the bread into the pan, pouring over the remaining mixture. Cook for 2 minutes, then flip
6. Cook the other side for 2 minutes, patting down the bread and gathering up the mixture from the edges.
7. Place on a plate, cut into triangles and dust with icing sugar and pour the syrup over
8. Enjoy!

Bombay Toast:
Per portion / person
Ingredients:
1 egg
1 piece of bread
Splash of milk
Pinch of salt
1/4 finely chopped tomato
1 small onion finely chopped
1 tsp finely chopped fresh coriander stalks
1 tsp finely chopped fresh coriander leaves
1 finely chopped green chilli
1 tsp oil
Method:
1. Break the egg into a bowl and add the milk – whisk
2. Add the remaining ingredients – whisk
3. Add the bread to the mixture, turning a couple of times, until you see the bread has soaked much of the mixture
4. In a frying pan add the oil on a medium heat until hot
5. Slide the bread into the pan, pouring over the half the mixture, reserving the rest.
6. Cook for 1 minute, then flip and pour over the remaining mixture
7. Cook for 1 minute, patting down the bread and gathering up the mixture from the edges.
8. Cook for 2 minutes, flip – then 2 more minutes on the other side – flip (total 4 flips)
9. Place on a plate, cut into triangles and serve with tomato ketchup
10. Enjoy!
