Note: a classic croque monsieur uses bechamel sauce. But with the technique of mixing the grated cheese (emmental or can be cheddar or mozzarella)with the cream, the coagulant of the cheese will thicken the cream and it will be very similar to bechamel sauce and the taste even better.
