Despite the name, Chicken Française (French Chicken), is not French, but is actually of Italian-American origin. Though a little challenging to prepare and cook, this dish is actually delicious, with its buttery and tangy sauce tinged with our own substitute for white wine (which was composed of apple cider, balsamic vinegar, and cranberry juice). So how to best describe Chicken Française? Well, it’s a little complex, but if we were to put into words its exciting flavors that one experiences while eating it, Chicken Française tastes provincial. You know, like it reminds you of French villages and gardens away from the hustle and bustle of the city. To put it in another way, this dish is also cosmopolitan: it was made by Italian immigrants who settled in Rochester, New York, and gave it a French name.

CHICKEN FRANÇAISE INGREDIENTS:
2 chicken breasts
1/2 cup plain flour
2 eggs
1 handful of fresh parsley
50g – 2oz Parmesan cheese
1 cup white wine*
1 cup chicken stock
1 garlic clove
4 tbsp olive oil
4 tbsp butter
Half lemon
Salt and pepper

* (You can use substitute for this)
White Wine Substitute for Chicken
1/2 cup chicken stock
1 tbsp balsamic vinegar
1/4 cup of cranberry juice
1/4 cup apple cider
