In order to gently toast barrels evenly and consistently every time, the barrels are transferred to several stations at which they spend a preset amount of time at each, over fires that are measured by infrared technology for consistent temperature management. The fires are fueled with oak chunks left over from the stave-milling process so that no foreign aromas or flavors are introduced during toasting.
