Freeze & use within 1 month to ensure proper texture. Place frozen or thawed potatoes in a covered oven-safe dish and heat in a 350º F oven for 20 to 30 minutes, stirring occasionally, until heated through.

Recipe can be made 1-2 days ahead OR baked & then frozen for up to 1 month. Bake, cool completely then cover tightly and put in refrigerator (or freezer). To re-heat, bring close to room temperature (will re-heat quicker), keep covered and put in a 300 degree oven for about 30 minutes, may take a little longer depending on how hot your oven gets.

Freeze and use within a few weeks for best taste/texture. To bake, remove from freezer and place in fridge the night before. Assemble and bake at 375 degrees for 35 minutes.
