Passionfruit Macarons 🇫🇷

The indulgent macaron was introduced to France by Catherine de’ Midici in the 16th century and gained popularity during the French Revolution when sold by two nuns in Nancy seeking asylum to support themselves. We now know macarons were invented by Pierre Defontaine in the 1930s, who had the idea to sandwich the biscuits together with a filling of ganache and buttercream.

These little biscuits are not as difficult to make as you might think once you have all the tips and tricks! You can easily substitute the flavour profile by changing the filling and adding different fruits, curds, buttercreams or jams. You can also add dry ingredients into the shells such as cocoa powder, matcha powder or freeze-dried fruit powders.

Once baked the shells can be frozen, unfilled, for up to 3 months. Make sure you line each layer with baking paper so you can remove them without sticking.
