Love french breads? looking for easy and quick to do recipe? here it is, a simple and so easy homemade recipe.
note though that in this recipe,i use cold water.
I was taught in school that water temp. in bread making is based on the temperature of your surrounding and the flour itself.so if you live in colder areas your water temp.should be lukewarm,and here where i live tend to have warm temp.so my water is cold..proofing time wise,it may take longer that it stated in my recipe so do note that your dough should be doubled in size when its ready…its important to keep your dough covered and place in warm area when proofing..
This recipe is best eaten when its fresh from the oven or if you intend to have it for later or the next day, you can just keep in a ziplock bag(airtight) and freeze it, then rebake st low temp. before serving.
They are great with soup,butter and jam or “kachang phool” one of my hubby’s favourite meals.So lets get on with it..
What we need:
• 600 g bread flour
• 6 g sugar( optional)
• 9 g yeast
• 380 g cold water
• 6 g shortening
• 12 g salt( pink or regular white)
Preparation
1. In a bowl,add flour,sugar and and yeast,give it a whisk,add water and mix well.
2.When water is fully absorbed,add the shortening and continue mixing few minutes the add the salt.
3. Turn speed to medium to medium-high and continue mixing till smooth and elastic.
4.Total mixing time should take ,10 to 12 minutes
5. Form dough into a ball and place it back in the bowl, cover and let rest/proof for 45 minutes or till size has doubled.on a warm weather, it can sometimes take only 30 minutes ( keep an eye on the size of the dough)
6.Knock back dough,and divide into 2 to 3 parts.shape them( please refer to video.arrange them on a tray lined with parchment and let them proof till size has doubled.
*Pour water in a pan/tray and place it in the lowest rack in oven and preheat at 220° C..water bath helps bread to have crispy/crunchy crust..
7..Scoring dough is optional,use sharp knife or razor.i like spraying my loaves with some water before i score.
8. Bake the loaves for about 20-25 minutes or until you get a nice golden brown top..
you may take the water bath out after 15 minutes to get the bottom part cooked.
9.Baking time may vary.keep an eye on your breads
Mixing time-10 to 12 minutes
Baking temp.220°C
Baking time- 20 to 25 minutes
