Here is an easy & simple recipe to make a delicious summer pasta salad along with a classic french vinaigrette.
Ingredients:
– Pasta (of any shape and size)
I have used a mix of lettuces and greens. You can even use just one variety from this or mix of two or more. Salads are tastier if it has more than one variety.
– Iceberg
– Battavia
– Sucrine or baby lettuce
– Baby Spinach
Vegetables:
– Cucumber
– Tomatoes/Cherry Tomatoes (even few sun dried tomatoes can be added)
– Carrots
– Olives (black & green)
– Red Onions or (Red Onion pickles as shown in the video)
– Lemon zest- (Optional)
Dry Fruits:
If you like to enjoy a touch of sweetness in your salad, go ahead and add dry fruits
– Raisins
– Dried Cranberries (dried Apricots, Dates, figs etc… can also be added)
Nuts:
If you like to include crunchiness of nuts, then add them too
– Almonds
– Walnuts
– Pecan nuts (any nuts can be added).
Cheese – FETA (This goat cheese is little salty and yummy for salads. Mozzarella salad balls can also be added)
Optional- Finish it off by sprinkling some seeds like Chia, Sesame, Sunflower or poppy seeds.
French Vinaigrette Dressing:
– 5 Tablespoon, Extra Virgin Olive oil
– 2-3 Tablespoon Apple cider Vinegar (Red wine, White Wine, Balsamic vinegars can also be used)
– 1 teaspoon of (Dijon) Mustard sauce (in french its called *Moutarde*)
– Salt & Pepper
Salads are so flexible so feel free to replace any of your favourite veggies, dry fruits and nuts apart from the ones shown in the video and make your own combo of delicious Salad.
