Quick and Easy Dinner.
Ingredients:
4 pcs. Chicken Breast (1/4″thick)
1 tsp chopped dried Tarragon
2 tbsp unsalted butter
1/2 cup cooking wine sherry or dry wine sherry
1/4 fresh lemon juice
salt & pepper to taste
1/2 cup all purpose flour
Direction:
Use the flat side of a kitchen hammer to Gently flatten the chicken breast to approximately 1/4 inch. We want it thin so it sautes quickly.
Salt & pepper to taste.
Place the flattened chicken,one piece at a time,in a sealed plastic bag with flour and shake until coated. Tap off any residue flour. We only want a thin coat of lour to remain.
Add butter to a large saucepan and heat on medium until it bubbles.
Add chicken to pan and cook until light brown approximately one minute per side.
Turn down the heat and add sherry. Let simmer for five minutes until chicken is tender. Remove from heat.
Sprinkle with tarragon and squeeze lemon juice on the chicken.
Drizzle the sherry/butter sauce over the chicken.
Delicious with a side of white rice or boiled parsley potatoes. Enjoy!
