French Toast Sandwich Recipe:
1 sandwich
Ingredients:
2 slices of bread
1 egg
1 – 2 Tbsp. milk or milk alternative
1 tsp. Vanilla extract
A sprinkle of cinnamon
1 Tbsp. butter
½ avocado
Salt
2 slices bacon
Real maple syrup, warmed
Directions:
Place bacon in a frying pan over medium high heat. Once the bacon begins cooking, lower heat to medium. Turn the bacon over frequently until it turns brown and gets slightly crispy. When done, place the bacon on a paper towel covered plate.
Place the egg, milk, vanilla, and cinnamon in a shallow bowl and whisk until thoroughly combined.
Mash the avocado in a bowl and add salt to taste.
Preheat a pan over medium heat. Add the butter and spread it where the bread will be placed on the pan. Place a slice of bread into the egg mixture and let it soak in for 20 seconds and then flip the bread over to coat the second side.
Place the coated bread onto the pan. Repeat the process with the second slice of bread. You may need to lower the temperature to medium low if it starts to brown up too quickly. Cook the french toast until it becomes a golden brown and turn the pieces over to cook the second side.
When done, place the french toast on a plate. Spread the avocado on one slice of the french toast. Add bacon on top and then drizzle maple syrup over the bacon. Place the second slice of french toast on top to make the sandwich.
Slice the sandwich in half and enjoy warm.
