They source their oak from different forests in the center of France for their French oak barrels and from Missouri in the USA for their American oak barrels.

Barrel aging is the cornerstone of the process called elevage, which is the French term meaning “raising” used to describe what happens to the wine between the fermentation and bottling. This process can last for a few months to many years, during which time the wine’s flavors integrate and mature. The barrels are toasted over a fire to either light, medium or dark toast level. New barrels with light toast will give lots of vanilla and caramel notes, while darker toast will give smokey, roasted aromas.
