Ready to prepare a wonderful French dinner with a twist a la Camille Tardeau? Let’s prepare our delicious main dish: Monkfish with a tarragon & mussel sauce, samphire, broad beans & peas and sundried tomato & pine nut crumb.

Ingredients:
150g Monkfish per person
2tsp butter
salt and pepper
Samphire
A handful of both broad beans and peas
Mussels, 10 per person
Dash of white wine
Tarragon sauce: 1tsp heaped butter , ½ shallot – diced, a dash of white wine, ½ a small bunch of tarragon, double cream, pinch of salt, pepper.
Sun dried tomatoes Mudica: 80g breadcrumbs, 80g sun-dried tomatoes, a clove of garlic, 20g pine nuts.

Food pairing. This dish palys with delicate and aromatic flavours that accompany very well the delicate aromas of 1664 blanc.
