FRENCH ONION SOUP

INGREDIENTS
Olive oil 4 tbsp
Butter 30 g
6 white onions
Swiss cheese 350 g
Parmesan 150 g
4 toasts
Melted butter 50 ml

BAKE
200°C / 400°F
15 minutes

Salt
Black pepper
Sugar 1 tbsp
Flour 3 tbsp
Beef stock 800 ml
White wine 100 ml
Ground sage 2 tsp
Cognac 40 ml
Bay leaf

PREPARATION
Heat the pan with olive oil and butter adding chopped onions
Shred the Swiss cheese
Cut each toast into four pieces and put them at the bottom of the baking pan
Spread the melted butter on the toasts and top with shredded Parmesan
When the onion in the pan is golden add the salt, black pepper, sugar, flour and stir all together
Pour the ⅓ beef stock and bring to a boil, then add the remaining
Add the white wine, ground sage, cognac and bay leaf
Simmer the soup and at the end add shredded Swiss cheese
Serve the delicious soup with toasts and enjoy!
