Risotto with green asparagus and pin nuts
Ingredients :
8 asparagus
90 gr round rice (3.17 once)
7,5 cl white wine (half cup)
30 cl broth (10 fl.oz)
40-gram parmesan cheese (1,41 once)
40-gram pin nut (1.41 once)
1 shallot
1 tblsp olive oil
15 gram butter (0.52 oz) and one stabespoon of crème fraîche (optional)
Recipe :
Cut the asparagus legs about 1 cm and cook them in slightly salted boiling water for seven minutes then cut the legs into small sections
Chop the shallot and sauté in olive oil
Add the rice and sauté for one minute, stirring
Add the white wine and wait until it’s fully absorbed before adding a large tablespoon of broth. Repeat this operation twice while stirring. Then add the rest of the broth and let it simmer for a total of 20 minutes.
After 15 minutes of cooking, add the asparagus sections and the pine nuts into the rice. Cook for another 3 minutes and add the butter, cream and parmesan.
