Caramelized onions are one of my favorite condiments–great for French Onion Soup, party dip, on pizza, in a salad dressing…they’re so good I often eat them straight! And while they take a while to make, they couldn’t be simpler, and they’re so, so worth the time.

You’ll need:
1. Onions — I recommend Spanish or White rather than Vidalia/Sweet…they’re going to get a ton of sweetness from the caramelization process, so it’s nice to start with something that makes you cry a little when you cut them.
2. Salt
3. Water (maybe…you could use wine or beer, too, and might not need either.)
4. Honey (optional but recommended)
5. Balsamic vinegar (optional but recommended)
