This is a fool proof recipe for French madeleines. This traditional small cake from north eastern France and they are typically eaten for breakfast where they dip them into milk.

Making madeleines is not very difficult but it is important to follow the instructions carefully. Getting that nice hump is the most challenging part of making perfect madeleines; you’ll see many madeleines being presented with the shell-like side up as if this is the most important hallmark. In France they call the hump, the pearl of madeleines
Madeleines are typically baked in special moulds that imprint a shell-like pattern.

Ingredients for 12 madeleines:
The zest of one lemon
140 g flour
2 eggs
90 g of sugar
7 g baking powder
1 tbsp poppy seeds
110 g of butter
optional: Icing sugar and/or Matcha powder
