These days I am creating a lot of social dining events for people in Seoul to come out and experience purely plant-based, vegan meals. The Vegan Dining Seoul series is held in collaboration with a different restaurant each time. The restaurants are often looking to push their boundaries and offer something new to their customers.
This edition of Vegan Dining Seoul was held at L’Empreinte Bistro Seoul. Chef Gregory and his partner Yeonjin reached out to me back in January about collaborating. At this time, Gregory had done his best to cater to vegetarian customers but had been at a loss regarding how to adapt French cooking for vegan customers. But after sharing my knowledge on various vegan replacements for eggs and dairy, Chef Gregory was off and starting to test new dishes within a few days. His enthusiasm and desire to constantly expand his culinary abilities is really inspiring.
